BEEF CUTTING OPTIONS When you order a quarter of beef, you'll choose one of the three cutting options below. We'll do our best to accommodate special requests, but it's extremely difficult to customize quarter shares. If you order a half or whole beef, you'll chose one of the three cutting options and have the opportunity to make special requests by completing this form. Half and whole beef orders will not be considered complete until we receive this cutting order.  Please note, for all cut options: Steaks are cut 1-1/4" thick and come 2 per package Ground beef is 80/20 and comes in 1-1/2 pound packages Roasts weigh between approximately 3 pounds All cuts come in BPE-free cryovac packages, the only option available at our local cutting...

WHAT DOES IT MEAN TO BUY A COW SHARE?

How much meat is that? A typical quarter cow (25% percent of a 1,000- to 1,200-pound animal) will yield approximately 90 pounds of meat, or enough beef for 50 to 60 meals a year for a family of four that eats beef once per week. For best quality, buy what you can eat 12 to 16 months. If you eat beef more often or enjoy entertaining, you may want to consider a half.  If you only cook beef as occasional treat, think about splitting a quarter.  And if you find a friend to split a quarter share, remember there are only two flanks (and two flank steaks!) on a cow. LAMB SHARES

  Lambs are a newer addition to our lineup, but a species that Sam has wanted to add to our multi-species grazing program for some time. The animals came from a neighboring ranch and the breed (Katahdin) is known to perform well on pasture without competing with the cattle for forage. In fact, many of the plants they eat are "weeds" the cows won't touch. The fact that sheep and cows have different nutritional needs means we have the opportunity for greater production from the parcels the animals graze while we manage the pasture for soil health.  Since Sam brought them back to the ranch, they've been grazing our pastures with abandon. Mapo Tofu (Sichuan-Braised Tofu with Pork--or Beef)

Mapo tofu is the most renowned dish from China's Sichuan province and is well loved as comfort food by fans of chili throughout the world. It's quick and easy to make once you have a few specialty ingredients in your pantry, and is delicious made with ground beef, ground pork, or a combination.
