Curious about buying in bulk and the benefits that come from sourcing directly from the ranch? Not enough room in your freezer or members in your household for a 1/4 cow? This is the answer.
The equivalent of 1/8 beef, the Mini Grass-Fed Beef Share gives you the same variety and savings of a larger share without filling your entire freezer. Best of all, you get everything for an average price of $10.99 per pound, or the price you'd pay for our ground beef in the grocery store. That's an overall average savings of 25% over retail.
Here's a sample of what you might get:
1 chuck roast, split
Butcher’s Choice: Brisket OR flank steak OR tri tip
21 pounds ground beef (in 1-1/2# packages)
3 ribeye steaks
2-3 New York steaks
1 sirloin steak
2 tenderloin filets
2 packages stew meat
1 package short ribs
1 package osso bucco
Mini shares range from 75 pounds to 87 pounds (hanging weight) and yield between 47 and 60 pounds for cut meat for your freezer. The hanging weight price for a quarter is $5.00 per pound.
The cows are harvested on the farm for a fee of $145.00 per animal ($20.75 per mini share) and transported to Valley Meat Services in Wallowa. Valley Meat charges $1.04 per pound to cut and "wrap" (vacuum-seal) the meat.
Here's what the pricing might look like for an 1/8 cow weighing 75 pounds:

**Totals vary between $470.00 and $540.00, depending on the hanging weight of your animal.
